Why consume baked goods made with sourdough?

Choosing baked goods prepared with sourdough brings quite a few benefits for our body.

 
Sourdough is a simple mixture of flour and water. When kept in a warm environment, it begins to ferment or, in plain terms, to bubble. Sourdough is therefore a natural leavening agent that can completely replace commercial baker's yeast.

The most important benefit of using sourdough is undoubtedly its superior digestibility. Sourdough breaks down gluten and other harder-to-digest components in flour, making digestion easier. For this reason, sourdough bread or sourdough-based products are often more suitable for people with gluten sensitivity (those with coeliac disease are, of course, excluded).

Sourdough bread also has a lower glycaemic index than most commercially produced or conventionally prepared (yeast-based) breads. This means it releases sugars into the bloodstream more slowly, helping to maintain more stable blood sugar levels.

The sourdough fermentation process increases the bioavailability of nutrients such as B vitamins, folic acid, iron, zinc, and magnesium. In short, the body absorbs more nutrients from consuming it.

During fermentation, beneficial bacteria - probiotics - develop, which can have a positive effect on gut health.

Sourdough bread is based on natural fermentation, without the use of commercial yeast, making it a more natural and traditional method of bread preparation.

Thanks to natural fermentation, sourdough bread typically stays fresh longer and is less susceptible to mould. It often contains no added preservatives, improvers, or other additives commonly found in many conventionally prepared breads.

Sourdough bread has a distinctive, rich, and slightly tangy flavour that is the result of long fermentation. Many people appreciate this unique aroma and texture, which is difficult to achieve with quickly prepared breads.
 
Choosing sourdough bread therefore means opting for a more nutritious, digestible, and flavourful alternative to commercial breads. It also supports traditional baking methods that are more environmentally friendly and culturally rooted in food heritage.
